Some people Ali says like to cook and maybe this is not the right class for them. This cookery class is for those who lack confidence and hate to cook and feel that the pain involved is not dissimilar to that associated with child-bearing or the paying of taxes.
Ali has intended to create these classes as a unique gift in celebration of birthdays, weddings, appreciation of a loved one or other special events. This is a one day event commencing with espresso coffee or cafe latte at 9am at Lé Chateau Ali. It is then time to join Ali on his trip to the fish market. Here you will receive a lesson on what to look for when buying fresh fish. You will also have the opportunity to purchase fish for yourself at Ali's special prices from his local supplier. A visit to the vegetable market will follow with a stop for refreshments en route.
We then return to the restaurant and spend the remainder of the morning with Ali cooking recipes from his latest books, learning some of the tricks of the trade, great presentation tips and how to use fresh herbs.
Starting with four different starters you will then leam how to clean, skin, descale and debone fish as well as how to skin and debone chicken and poultry. Cooking methods taught will incorporate frying, grilling and baking. The making of sauces will follow. Afterwards it is time for a' late bite' luncheon accompanied by a glass of wine.
Back in the kitchen we will make deserts with our pastry chef after which Ali will sit in the restaurant and discuss any questions you may wish to raise. A brief break and hot drink will follow and we will then return to the kitchen to check our dishes.
By now the time is four o'clock and it is time to sit down and enjoy the fruits of your work with a glass of wine. If you prefer you may choose to take your creations home. At five o'clock it is time to say Goodbye but before you depart armed with one of All's personally signed cookbooks the team of resident chefs will nominate a "Master of the Class" and this elected person will receive a surprise prize presented by Ali himself.
